What is your secret to making a perfect omelete?

I was watching good eats last night and I didn't know they were tips and secrets to making a great omelette, and I was interested in watching but my husband was not in the mood to watch it with me so I let him have the remote, but today I wished I would've watched it cuz I was making eggs...,can you tell me your tips to making the perfect omelette?

I mix the eggs with ice cold water. I saw that on some show once and it seems to make a light and fluffy omelet. I like a dash of paprika in it too.

Here is how I do it. I break 3 or 4 eggs in a bowl and stir them vigorously with a fork until they are completely blended. I add salt and pepper to the egg mixture. Once the pan is very warm I pour the egg mixture in the pan and immediately add the filling to one half of the circle. Once the egg is cooked solid I fold the omelette closed and flip it over. I turn it twice to make sure that the filling and egg is cooked completely, then I slide it onto a plate. My favorite type of omelette is the Mexican Omelette. For this you will need the leftovers from a taco dinner. You make the egg mixture as described above, adding taco meat and shredded cheddar cheese as the filling. Once the cheese is melted and the meat is hot, put it on a plate and top it with salsa, sour cream, fresh diced tomatoes and anything else you would like to add. It is very good!

Hmmmmm that sounds really good!!! I thought the omelette was simple but remained curios after not seeing that whole show last night , I guess I was doing it right then and I also love Mexican omelettes, not so much with the meat because since I'm pregnant I've been feeling not to attracted to eating meat,:)

I add a little bit of milk in the egg before cooking it.

i love omeletes& as much as i have cooked & do cook i don't make a pretty omelette like u get in a restaurant. they taste o.k. but they are ugly!! i was glad to see your discussion & read the responses. thanks for asking about them.
