I recently did a week long trail for a job and did not get it. 
I was not paid for my work, but I did the work. Would it be a lie to list this as a job, or experience, on my resume?

You didn't get paid, that is a total scam. You can report it as your experience on your resume, no one actually care about whether you got paid from your old jobs or not. They just want to see your experiences. You might want to list as much as you want. That is an advise. I don't know if it fits you or not.
