Pumkin, a traditional holiday food, is a great source of vitamin A, postassium, fiber, and is naturally low in fat and calories. Also, the seeds are full of fiber and polyunsaturated fanty acids - a good fat. "Canned pumpkin has more nutrients per cup than fresh cooked pumpkin, mostly due to remove of water, packing in more pumpkin per cup, "Says Dr. Jo Ann Carson, registered dietitian at UT Southwestern Medical Centre. One cup has only 83 caolories, 7 grams of fiber, and about twice the recommended dietary allowance of vitamin A. Simmer chunks of pumpkin with green beans for a colorful vegetate dish; bake it into a custard or pie; or add it to muffins, pancakes and cookies.
