Mmmmm mmmmm...some yummy banana muffins sound just Heavenly... Tonight I was looking around in the kitchen and going through my pantry and refrigerator seeing what was still good and what had spoiled. A few days ago I had bought up a bunch of bananas for .48 cents a pound. My kids have been going through bananas so much lately that I bought quite a few. Anyhow, I had about 8 bananas that were quickly turning brown and I knew that no one would want to eat them by tomorrow so I decided to look up a recipe for banana muffins on the internet. I had never made muffins from scratch so I did not know how they would turn out. But to my surprise I cooked them up and they were absolutely out of this world! I added some chocolate chips to the batter and they were yummy, yummy. My kids loved them and so did I. My husband doesn't like bananas or chocolate so he didn't want any. I am just glad that I was able to use up the bananas and food did not go to waste. I had to put the picture up of the banana mixture with the sugar. My son said it definitely looked like something else! LOL. It does, but believe me - it was delicious! Have a great day and happy myLotting!!!

They also work great for banana nut bread. I think I'll make some that next month. It's great to freeze and wonderful on a cold winter morning with a nice mug of hot cocoa. ~~AT PEACE WITHIN~~ **STAND STRONG IN YOUR BELIEFS**

SOunds good bananas dont last long around here so dont throw them away but we dont buy many at a time and we only like the Chquita kind and they are hard to find a store here that sells them. Banana nut bread comes to mind too also banana pudding yummy! Also did you know you can take the peel and plane it close to rose bushes to get the nutreients from them? So no waste at all

What a way of turning a possible bad thing into a really good thing. I havent really tried that and I actually dont know how to bake. However I do adore bananas and chocolate!^_^ I mightve did something differently to those bananas. I usually mix a chocolate paste with just chocolate powder and a bit of water. No need to add sugar. I slice up the bananas, mix it up, leave it in the freezer overnight and the next day its just like ice cream. I love to experiment with dessert, frozen desserts actually. Sometimes my concoctions might be unimaginable until they get to taste it for themselves.LOL Have a wonderful day to you too.^_^

That sounds interesting! I might just try it. Is it cocoa powder that you use? Is it unsweetened? I like the chocolate and banana combination obviously. Let me know. Thanks for your comment and happy myLotting!!!

I use a chocolate drink powder like Milo. Add in a bit of water, just enough to make a syrup. You can use other chocolate drink powder or maybe even the ready made chocolate syrup that you can buy in grocery stores. Try to experiment and let us know how it goes. Have fun!

Hmm... Banana Muffins? Sounds different, but good. I love Banana Bread, so would probably like these, and to add chocolate chips to them. That is interesting for sure. What a creative way to use up bananas when they start to get too ripe.

You know, I never really do banana bread at all. I figure it is easier and more convenient to do the muffins. They are already portioned out, you don't have to dirty up a knife to serve it, and it is convenient for the kids to just grab one for a quick, fairly nutritious snack! Thanks for your comment and have a great day!!

I actually made some banana bread the other night. Our bananas were turning brown and my husband said can I throw these away and I told him no that I would make some banana bread with them. I had everything in the pantry that I needed to make it. I have a recipe that a lady gave me several years ago because I ate some of hers and it was so yummy that I had to have the recipe. So that's the one I used and it made two loaves and it was so good. I couldn't believe my little boy ate it but he did and liked it and my husband and I liked it too.

That's awesome that you could use up your old bananas. Thank goodness your husband asked you about throwing them out instead of just throwing them out on his own. Way to save a buck! Thanks for your comment and have a great day!!

Muffins - With cheese and raisins
I'm looking for some idea on what to do with my overripe bananas. Well you just resolved my problem. I'm thinking of making banana cake out of it but I think for a change I'd do muffins instead. The kids will love it better. I will add some raisins to make it taste better and lots of cheese as well. thanks for the tip.

Glad I could give you an idea on how to use up your overripe bananas! I never heard of adding cheese to bananas. What kind of cheese do you add to them? Do you add it to the batter? Sorry for all the questions, it just sounds interesting. Thanks for your comment and have a great day!!

Hi schulzie, good thinking there to use up the bananas like that. I'm kicking myself now as threw some away the other day as they'd just gone black overnight and i probably should have made something out of them but they weren't just turning like yours but really turned. Normally I'd have caught them and made a banana loaf out of them but the heat which turned them so black so quickly did nothing to put me in the mood for baking

Banana muffins take very good. It looks like the muffins I've made. When the temperature is too high, they shrink. NOOO!  :( Enjoy the muffins!  :D

I always make banana cake. I buy old bananas really cheaply to do this. I also put in chocolate bits or even better, chopped walnuts. If I'm in the mood I do a lemon icing....so yummm. Any chance of you sending me that muffin recipe in a pm please?

I love making banana muffins with extra ripe bananas. I think the riper the banana the better they taste. My kids love to eat them too. The eat them a lot faster if I make mini ones as opposed to regular sized ones. They are begging for pumpkin ones at the moment.

If you like that you should like this one for bread.... http://allrecipes.com/Recipe/Chocolate-Chip-Banana-Bread-II/Detail.aspx It's pretty heavy but simply addicting!!! I will say I cut the sugar down as it was tooo sweet with the chocolate in there too and it still tasted awsome. And I know how that goes about kids and bananas one day they inhale them the next they don't. Too bad it's hot out, you have me craving something baked and tasty now!

I ill cook steam banana cake. It is delicious too. Looking at the ripe banana and no ones want to eat that, I always mash it and make a delicious steam banana cake. As for me, I don't have a oven to bake a cake, that why I steam the cake. Guess what, it is of course delicious. And steam cake is more healthy!
