TYhis is a shot of my 2 loaves of Zuchinni Bread I made last night.
I have many zuchinni and this is my latests plan with a few of them. It took one medium sized zuchinni peeled and grated to make these 2 loaves. Flour, eggs, oil, sugar, cinnamon, salt, and baking soda are the ingredients. My dad loved it as did my wife. They had never had Zuchinni Bread before. Have you ever eaten Zuchinni Bread? Do you make it yourself at all?

Ummm to me zuchinni tastes like.....zuchinni. Not tomatoes that's for sure. Hard to describe the taste as it is different with each way it is cooked actually. But not a tomato taste for sure in my eyes either.

Thanks for the idea, Granpa Bob. I never have had zuchinni bread but it´s about the only thing I haven´t done with them. I make appetizers, soups, main dishes of all kinds. This is an addition.
Happy posting.

My, they look mighty tasty there. I've never made it but my sis-in-law does but only in the summer/fall when her zuchinni is ready. She will go on a baking spree and freeze at least 20 loaves of it. She also freezes/cans alot of zuchinni for the winter months. I've had hers and loved it. Doesn't even taste like zuchinni with the cinnamon in it.

And when it is peeled like I do theres no sign of the zuchinni in the bread either. Can't even tell it's in there. Tasty as can be I feel. LOve the cinnamon taste to it a lot as well.

You are so right. psstttt- parents of children who hate the stuff. Make the bread and they'll gobble it right up without knowing what they are actually eating.

I love zucchini bread! I usually put some grated carrot and some chopped walnuts into it, though. I also save all the cereal from the bottoms of the bags, the pulverized stuff, and pour that in, too. Nothing goes to waste here!

I have made zucchini bread, but it's been decades since I did. Mom used to make zucchini fritters, but I don't care much for them. I like corn fritters, though. And, I like fried zucchini. Zucchini bread is OK, but I like it better with cinnamon and raisins in it. A friend has been making peach bread since she was given a bushel or more of peaches. I've got to get that recipe because it just sounds really good.

Mom would make her fritters with creamed corn, but most recipes I find call for whole kernel corn. I prefer the creamed corn because the flavor is throughout the fritter. With butter and syrup. Yum. I'm not a fan of hush puppies, but I do like the fried outer layer! LOL What can I say? LOL

Oh you and your pictures are really making me hungry. Is that your plan? If it is, it is really woking. Yummy. I love zuchinni bread. Your looks really yummy. I wish I could reach through the computer screen and have a few bites. Oh it makes me miss my stepmothers cooking. She is a really good baker. I have eaten zuchinni bread many many mnay times. I have made it sveral times myself. To bad my husband does not like anything like that. I have not made it in a long time but in a month or two things will change.

I have never heard of zucchini bread before much less make it but I do remember someone gave me a zucchini one time and for the life of me I can not remember how I cooked it but I do know it wasn't a big hit. This is amazing what you do. Keep up the good work.

You peel your zukes?
I used to make zuccini bread all the time, even used it in my Christmas fruit cake, but as you may recall, I haven't had any luck with growing the darn things here.

Yes I do. When peeled the zuchinni actually cooks to the
point where you can't see them in the bread when done.
Here's a shot of the mix prior to cooking them.

Hi Grandpa Bob yes I have made it ages back when I still was in our'ap apartment but mine didnt look as scrumptious as yours does but it did'taste pretty darned good.oh and iput some walnuts in it too.my favorite restaurant serves it ocassionally and they do a pretty good
job on it. it goes out so quickly you need to come early. he he he.
they make carrot cake here but not zuchinni bread and I think the zuchinni bread would be better for us as they put a three inch thick icing on it that just kills my blood glucose it might be tasty but I dont want to go into a coma either. But Gold Crest is not known for really healthy food just for pinnching some pennies.

I love zuchinni bread, it reminds me a lot of banana bread. Try adding nuts and chocolate chips, it makes a really nice snack cake, or dessert bread. I have a recipe called, Dilly Zuchinni casserole....if you are interested, PM me and I'll sent it.

The first time I ever had zuchinni bread has been many years ago. A girl who lived across the street was from Germany and she made some and shared with a lot of us. I thought it was going to be horrible but I loved it. I have only had it a couple of times and have never made any myself.

These look yummy! I like to make "sweet breads." I think a bread full of fruits, vegetables, or nuts is extra healthy, especially when made from unbleached or whole grain flours and replacing part of the fat with applesauce. Delicious any time of the day or night.
