help!!!!

December 23 is camodad's birthday and he always gets ripped off because of it being Christmastime. All he wants is a chocolate cake with peanut butter icing. I made him one last year and he loved it but I can't find my recipe. He's also diabetic so I can't make just any chocolate cake or peanut butter icing. Another problem is that the cake I made last year, the icing was EXTREMELY thick and hard to put on the cake. I need some idea's on how to make a creamy peanut butter icing that will be easy to put on a cake and a diabetic safe chocolate cake recipe. Any suggestions, recipes, idea's, etc......will be GREATLY appreciated.

That is the grossest thing I have ever heard of in my life. Chocolate cake with peanutbutter icing. Ugh! Thick icing? I would check with that place that makes the frozen icecream cakes. See if they make them. My only suggestion would be to try to talk him out of it! Oh, ya cause it sounds just down right nasty.

I do love Grandma's peanutbutter cookies and eat them occasionally. Also love Jiffy and Adam's. I know it is good protein and when I am exercising I do eat it. Not much though nor often. Gives me heartburn too.

That's good to eat protein before exercising, I'll have to keep that in mind when I do Wii Fit.

I agree! I won't eat it but it's his favorite. I made one last year that he LOVED but it wasn't worth the work to me. That's why I need something that will spread easier. I don't even like the smell of peanut butter.

For the frosting you could try blending peanut butter and cream cheese together and adding a packet of sugar free vanilla pudding mix and a little bit of water to make it a little easier to spread. I would of course try this first before frosting a cake with it.

Well I think that if you are looking for a diabetic recipe, then go to a diabetic website. Also get a diabetic cookbook. These are the safe bets because you know everything is safe then.

Buying for a diabetic person can be rather difficult. Most super market chains have websites attached to them. Also, if he's real careful a little extra sugar won't hurt. As long as he keeps an eye on his blood sugar levels. My first real suggestion would be to check out a super market website for verious respie guides. Places like publix specealize in meals that are fit for people with varioing conditions. Ask your local pharmist what you can do. Peanutbutter itself can be very healthy as it contains very little sugar and containes a good amount of protaien. Try asking him what he does for subututes for the raw sugar cakes sometimes offer. Be casual about it, and he'd still be suprised.
