How do you like your omelettes?

I find plain or herb omelettes too bland. Whatever else I put in them, they always have to have some strong cheese as well. Yesterday I made omelettes for lunch and added what was left of the ham I'd cooked on Christmas Eve, chopped quite small, along with some cheese of course. What do you put in your omelettes?

My favourite is with mushrooms, onions, tomato and mackerel (canned) seasoned with black pepper no salt. But I also do like a plain omelette with nothing in it. Both served with bread or tast...yummy

Never thought of putting oily fish in before. Could certainly try that with canned mackerel. It should be a very halthy option, especially with those veggies as well.

Hope you do try it it is really nice. If you feel like being a bit naughty you can also add a little cheese to this combination that is nice too.

I live in Spain, and here, they always put potatoes in their omelettes - or 'tortillas' as they are known here. Fry some thin slices of potato with onion and garlic until soft, then add herbs and seasoning of your choice, finally the eggs. The way we cook our omelettes is, once the bottom has set, put the pan under a hot grill to cook the top. You can't really flip an omelette with potatoes in. You can add chopped tomatoes , mushrooms, peppers and anything else you fancy or have available. The tortilla is really versatile, and much more filling than an ordinary omelette.

Hi Sandra, I would not say that tortillas and omelettes are the same thing. The french omelette is somthing that you can fold in the pan. When I make tortillas, I have an old lid (la tapa de una olla vieja)to help me turn it without spilling. Happy posting!

Thank you Sandra. I have eaten tortillas like this in Spain. I've also tried to cook them, without a lot of success so far. But I have pinched the idea of finishing the top under the grill. I always make my omelettes this way.

I like cheese, mushrooms, and red peppers. Sometimes I will put in just cheese and salsa.

I love your name, cutepenguin. Thanks for responding. Seems like most people like cheese in their omelettes. Mushrooms and red peppers are a new one, though.

I like to hook mine up with sliced cherry tomatoes, onions, green bell peppers, and spicey cheese, or even sharp cheese, though I don't really like american cheese on mine.

Hm. Well, I like the idea of vegetables and cheese. But the cheese varieties you mention - spicey, sharp and american - are not familiar to me. I clearly need to learn about cheese types in the US.

I agree with you that cheese is de rigour in omelettes. I do like the occasional plain or herb omelette, but mostly I, too, must have cheese, or a combination thereof. I like spinach in my omelettes, scallions, which are delicate and I sometimes combine with cream cheese, and also asparagus, avocado, and other veggies. I also like sausage, ham, bacon, or all of the above. But, you have to get proportions right or it gets to be "too much" of a good thing. One of my favorites is a Spanish Omelette, with onions, peppers, mushrooms, tomato sauce, and cheese. A farmer's omelette with potatoes, meats, and cheese is good, too. There are so many variations. Seafood omelettes, such as crab or shrimp are good. Almost any leftover you like can be incorporated into an omelette. Many people like jelly omelettes. I prefer savory omelettes to sweet.

Loads of luscious ideas here. And of course you are right. The variations seem limitless. I too prefer savoury to sweeet.

I like an omelette every few days. Like you I often put in ham, tomatoes and cheese. Sometimes I have a little onion or if I'm feeling really daring. I have them plain! My Dad makes kipper omelettes! They're every bit as disgusting as they sound!

Yup. Kipper omelettes do sound disgusting. I'd guessyou culd do something with smoked haddock or cod, though, especially with soem cheese or cheeses s auce.

I put anything left over in the frig into an omelette. But on almost all we top with salsa which adds some zip.

I love omelettes and as I live alone, it´s very easy to make one and eat it while watching TV. I make them with anything that I have on hand. Many times it is cheese and ham or bacon, but I also make them with any kind of leftovers that I have in the fridge, A handfull of cooked rice (I don´t throw it away), some chives and diced cheese make a wonderful omelette. Another one I love is when I have some string beans (I steam cook them al dente)and add parmesan cheese. I think I could spend the rest of the day talking about my favorite omelettes.I love them every single way. Happy posting!

I like omelettes with ham and cheese, some herbs, few spice and many eggs. They are good for my taste. Especially with many cheese or few milk making more creamier. Plus a chocolate beverage side. It is so yummy!!

I like it the best with fried chopped ham and the cheese mixet with the eggs. when the ham is fried you put in the eggs mixed with the cheese and they melt together. It's simply delicious. Or you can try another one: frie some chopped onion, then put the chopped ham or salami or whatever meat you like and then put the omlette in mixed with cheese, green pepers and if you want it juicy some totatoes are excelent. Bon apetit and bon MyLotting;)
