Salmon for diner?

Chilean salmon with veggies - I baked the salmon in foil and served it with cooked and raw veggies.

I bought some salmon to treat my favorite cousin who comes for diner on Friday nights. He is picky: I will not be able to make any special sauce. Maybe I should make a variation of a salmon dish I made a couple of years ago for my best friends. It turned so nice that we took pictures of it.How would you prepare salmon for a picky and slightly hypochondriac man? I´m posting the salmon picture I have but I accept sugestions. To begin with, this dish will not have anything red. My cousin does not like sweet mixed with salty and says he´s allergic to tomatoes (I wonder what red food I could add so the veggies are not only green). Help!

u ARE TOO GOOD FOR YOUR OWN GOOD. i WOULDN'T BE THAT NICE TO HIM. pICKY EATERS GET ON MY LAST NERVE, LOL. aLL i can think of would be red onions & red bell pepper.

Hi alaska, i feel the sameway. I was raised to eat what was put on the table & to keep my mouth shut alto i never really had a problem w/what my mother & grandmothers cooked.

Nothing is black or white in this world, friends! He IS a pain as eating goes. But he comes and while we talk watches what is wrong in my house. So, while I´m setting the table, he goes back to his car, brings a profesional set of screwdrivers and starts to mend. He even had my car repaired some months ago as he knows a mechanic. He said it had costed next to nothing so he did not let me pay for it. Two weeks ago I was showing him my garden and I noticed that my apricot tree had a parasite plant in one branch. I cursed as I am very scared of climbing up ladders. He asked if I had a ladder and a saw. I obliged. He climbed and cut. I only directed. If he doesn´t like tomatoes, I´ll think up of something else! If he thinks onions are bad, I´ll carefully disguise them. I do that for all the peole I love. We are all intractable, when we think of it. HUGS!!!

I agree. I would fix it the way I want and if he doesn't want any, fine...he could starve! But I do understand. I have to deal with my sister and she is intractable, too, which is why I rarely have her to dinner.

I grew up in Southeast Alaska where salmon was as common as beef in ranch country. My mother always baked the salmon with lemon slices and served it with tartar sauce on the side. I had a friend who was Alaska native and her parents baked their salmon with bell pepper, onion and tomato slices and I have never tasted anything better. They served it with rice and the juices from the veggies made a lovely sauce to pour over the rice. If your cousin doesn't like tomatoes, you can just leave them out and maybe add some thinly sliced celery for a nice flavor. Bake it covered to keep the juices from evaporating and you'll have a lovely sauce to pour over rice.

I will make that bell pepper, onion and tomato recipe but not for my cousin. He won´t eat any of the 3 ingredients. He has brainwahed himself that all of those foods (and many more) are bad for his health. He´s very spoiled, but too old to be changed.

He is an only child of divorced parents. That might account for part of it. The rest is genetic. I´m quite picky myself but in a different way. Noone could see me near fastfood chains. Even the smell makes me sick. But I like good restaurants and gourmet food]. I can bake the fish on a bed of onions and then throw away the onions before he sees them. I have done such things and he doesn´t get ill.

LOL...how did he get that way? My sister is like that but she has Aspbergers. Does your cousin have some sort of mental disability??? Just curious. That does make it very difficult to please. Of course, you could always just bake the fish without anything.

I had salmon for lunch. It was leftovers from Monday's dinner and it was done on the barbecue, wrapped in foil, with a honey mustard marinade.

I could make it in foil to have it juicier. I would have to marinade it with salt and lemon juice. No pepper, no honey, no mustard.

My cousin comes fairly often and he´s a dear. But it´s a good ides to put some sweet red peppers for the looks. I can plate it in such a way that he can put them aside if he does not want them.

Hi, Salmon fish is one of my favourite dish.I have not been eating salmon for quite some time, as I can find salmon fish sell in the market at my place here and if there is, definitely is very expensive. For salmon, I like it to be grilled ,then squeeze some lemon juice on the top and eat with mayonaise,it taste superb. you can try it out one day. Since your cousin is allergic to tomatoes,you can try add capscium.Hopefully he will like the taste.

We export salmon so that, even if it is not cheap, it is not so expensive as it is in other countries. I made the dish in the picture with so big a piece because it was a special occation. But when I buy it for myself, I serve a reasonable and have something nice to go with it.

Hi, So good that you get a good bargain in buying salmon. How I wish I can buy fresh salmon and serve it for my family too. It has been more than 3 years I have not been eating salmon fish. I have tried to find in the market,but to no available. Only at certain hotel restaurant, then can get this salmon dish and it is very expensive.

I have 3 brothers, and all are extremely picky, so I understand the problem. When making salmon for them to eat, I usually make a grilled salmon with a cilantro lime butter. They all love it and I never get any complaints. The recipe for the salmon: http://www.food.com/recipe/Southwest-grilled-salmon-with-cilantro-lime-butter-11478 You also said that you don't want to do rice, but couscous is a great alternative. I usually accompany the salmon with a buttery herb couscous and grilled vegetables. You can easily put red back into the dish without using tomatoes by adding red bell pepper with the grilled vegetables. Buttery Herb Couscous Recipe: 2 tsp Margarine or Butter 2 Cloves garlic, finely chopped 1 Medium green onion, chopped (1 tbsp) 2/3 Cup uncooked couscous 1 1/3 Cups Chicken or vegetable broth 1/4 tsp Salt (sea salt preferred) 3 tsp Chopped fresh flat leaf parsley 2 tbsp Grated Parmesan cheese Melt margarine or butter in 2-quart nonstick saucepan over medium heat. Cook garlic and onion in pan for 1 minute, stirring so it does not burn. Stir in broth and salt. Heat to boiling. Stir in couscous and remove from heat. Cover saucepan and let stand for 5 minutes. Stir in parsley and Parmesan cheese. For the vegetables I normally use zucchini, yellow squash, asparagus, red bell pepper, onion and mushrooms. I cut them all in big chunks so they can be grilled without getting too done. You can simply sprinkle those with salt, pepper, and garlic, drizzle with olive oil and put them on the grill or on a sheet pan to roast in the oven. I love couscous, but I´m afraid it would scare my cousin. He has no eating culture. I think he lives by eating bought roasted chicken, french fries, bought desserts and sodas. No use trying to change his ways too much: he´s 65. I can smuggle some new tastes in food he normally eats though. He likes my rice better that the rice he makes (so he has said) but I won´t tell him that I fry the rice with some crushed garlic.

Unfortunately the salmon here in the Philippines is kinda expensive especially when I am seeing that in wet market. But then I could ask my parents to have that salmon and I will do it on my own recipe or by looking at the recipe book to decide what kind of dish I should prepare.

I just eat canned and preserved salmon. I haven't really tasted a freshly cooked salmon. I also don't have any idea how to cook it.

Canned and preserved salmon has nothing to do with fresh salmon. It is the same with tuna fish. Fresh tuna fish is a delicacy; canned tuna is a can you grab when there´s nothing else to eat. These fish are wonderful too for japanese cuisine served raw with soy sauce, wasabi and pickled ginger root. Of course, my cousin would not eat raw fish!
