Wednesday, Hump Day, Recycle Day and more

Frijoles en la olla (boiled pinto beans) - So many uses and sooooo good, too.

Today is the day that the city picks up our recycles (a state mandate). Our problem is we often forget to get the can out to the curb. There are weeks where we are piling bag after bag of recyclables out there because we've forgotten to take it out previously. The same is true for trash day (which is Monday). My son said to remind him, which I did when we got home from shopping, but he spent the rest of the evening getting ready to go play pool and totally forgot. So, my daughter-in-law took the can out after midnight. It never fails....if we don't remember until the morning, the truck comes early and we miss it. If we take it out the night before, the truck comes late. Today is no exception! Today is also bean day. My pinto beans are fully cooked, succulent and delicious! I started them the day before yesterday. They weren't cooked through until later last night (and I snacked heartily, believe me). There's nothing harder to digest than a not-quite-cooked dried bean. The gas is bad enough without adding that issue to the digestive tract! Anyway, I had beans, eggs and scrapple for breakfast this morning. It was soooooooo good. It had been so long since I'd had pintos for breakfast. My mother-in-law used to make them and serve them every day at every meal. It was a rare occasion that there weren't beans on the stove cooking. Not having grown up with them, it did get to be a bit much for me, but I have never had another breakfast item that offered the same degree of simple pleasure that they did. And, they made the house smell so good last night (I had added a bit of dehydrated onion and garlic to the pot as they cooked). The nice thing is that we can use them for chili or mash them for refried or make baked beans (not likely since my daughter has a thing about sweet meats and beans) or simply eat them as is, in their natural state. So, that's my day so far. How's yours?

Our city picks up trash around town once a week, so we have to prep it for Thursday. Every other week, they also pick up the recycling, so that has to go down to the street too. Our trash gets picked up before 7 most weeks, and never later than 8, and same for the recycling - I think we are on the first route of the day! So, Wednesday is our day to do the cat boxes and gather the trash so it can go down. Some weeks I haul it down, others I let the other roomie do it, once in a while I nag the roomie to do it, but only after dark. Our trash gets pretty heavy, but while the recycling gets really full, it isn't heavy

I wish recycling was city mandated here. It is an option, but they do not pick it up. It is up to us to take it to the "transfer station." I put a sack of cardboard packaging in the car. I did not make it out there yet, I still have plastic and glass to package up. I went to Wal Mart this morning. On the way I stopped at a park and walked one lap around the lake. I am trying to do that more often. I came home, got on the computer a little while, and I read your hub page. I have several yummy leftovers in my fridge. I put left over beans, ground beef, chopped onions, corn, and chili powder in a pan, along with a can of Rotel. I am fighting a cold, and I sat down in my recliner and fell asleep. When I got up I ate a big bowl of that chili soup,that had been simmering for an hour and a half and I think that is how I will continue treating this dumb cold. Now it is time to get back to work on the computer.
