Cold Lunch ideas

I have a fairly new job and am stuck with only packing lunches that can be refrigerated but not heated. For the first few months I got by on Sandwiches and salads. I mostly had turkey, once in a while a PB&J. I'm trying to come up with more lunch ideas that don't require being heated up. I miss being able to pack left overs for lunch but 9 times out of 10 they have to be heated and since we don't have a microwave (or room for a microwave in our small kitchen area) I can't pack them. So....any cold lunch ideas???

Have you thought about taking things like apples and cheese or peanut butter along with maybe carrot sticks,cold fried chicken? Try celery, sliced green peppers, things like that along with whatever cold meat you enjoy. You don't have to make sandwiches with it.

I typically do take some snacks along with my "main meal" (sandwich, salad, whatever it may be.) So I already take fruit, granola bars, veggie sticks, etc. I don't really enjoy too many meats cold but who knows, maybe I should just give it a try...it has been a while since I've really had to eat any left overs cold. Maybe even pasta wouldn't be THAT bad cold? hmm time to experiment! lol

I don't know that I'd do cold pasta! LOL Maybe you should experiment at home first, before relying on something like that to fill you up at work. :)

I see some people gave some really good ideas already. When I worked in the office before I became a full time mom I preferred the cold lunches to hot lunches because foods/leftovers that had to be heated never tasted as good the second time around, of course other than Thanksgiving leftovers, I loved taking cold pasta salads, or potato salads, my favorite was cottage cheese and tomatoes... and then 2 days a week we would order out from a restaurant and I would get a greek salad and soup or a burger....something that would equal what it would cost me to make a lunch so I was never out much for spending money on the days we ordered in. If you like egg salad, that is always a good sandwhich idea, or you can even roll it up in a pita or lettuce and make it a low carb sandwhich if you are watching your carbs/calories.... or a BLT, as the bacon can be cold when you eat it. just some suggestions! My husband works in the construction field, and when he takes a lunch it has to be a cold one and he is forever doing the low-carb thing so I always have to come up with ideas for cold lunches. congrats on your job, I hope you like it.... and Happy Mylotting!

Haven't had egg salad in forever! Just might have to make some of that next week. I was thinking about cottage cheese (love it) the other day. Need to get some of that too. Thanks for the ideas!!!

Some ideas that come to my mind are chicken sandwiches and tuna salad. You could maybe even take a salad if you have an area to keep it cold at least. Also maybe you could order lunch once or twice a week too. I hope this helps.

Thanks! For some reason I always forget we have Tuna..to make a tuna sandwich. Actually Tuna is good on salad too! I need to remember that. lol
