A Question about Potato Salad

I've been eating this really wonderful potato salad from a neighborhood bistro and I can't seem to figure out what made it so tasty. I'm guessing paprika but my palate says otherwise. They've put something mildly sweet and salty in there and I can't really figure out what it is. Is it worcestershire sauce? Mustard? Onion? Chives? Certainly not the potato itself (or could it REALLY be the potato?) I'm only going by the tangy-salty-"sweet-ish" taste here, can you help me figure out the super secret ingredient in this potato salad?

It is a mixture of onions, mustard, and mayonnaise. I never put salt or pepper in my salad but it does have that flavor. And this bistro might put some Germany slant stuff in it like green olives and they have pimentos in them. And sourcream. Tangy sounds like mustard but could be the green olives. The pimento has a bit of that flavor too. Black olives have a bit of a peppery flavor I guess.

it might be vinegar.most potato salads have that in it. not really sweet,but definately tangy.

I think it's the mustard. I make a potato like I learned from one of my aunts. Sweet pickles, dijon mustard (just a couple of teaspoons), real mayonnaise, a little celery seed and that's it. It's the best stuff in the world as far as potato salad goes. The olive oil idea mentioned above sounds good. I might try some of that next time. Oh, and I also use red potatoes only.

I never put paprika on potato salads but I do put dill pickles diced so small that they can be hardly seen. The fact that they are pickled in vinegar add a touch of class to the potatoes. I don´t overuse mayo either and prefer a homemade one. A trick my mom taught me was to cut up the potatoes while hot (it BURNS, careful!) and add right then some olive oil so it soaks. Then you don´t need so much mayo and it is still wonderful.

The only potato salad that I've ever had that even tastes remotely like what you are describing here is a potato salad that my grandmother used to make when she was alive. When she made potato salad she always used mustard in it (for the tanginess) and she also used diced sweet pickles or pickle relish (for the sweetness). I have to say that she made the best potato salad that I've ever eaten in my life.
