spices and chili

we asians are fond of spices, and a little of chili. when the professor was here as our guest, he liked to eat spiced indian foods. my hubby brought spices, white rice etc. i have learned to cook indian dishes by experiment and am glad it turns out edible and we get to enjoy them most sundays.
tomorrow, i am going to cook another indian dish in the morning. i will be doing fried vegetable rice which i remember very well that the professor enjoyed during his stay here. i will add carrots and beans and cauliflower.
when cooking, what spices do you usually use? do you like it a little hot, or not?

I like spicy foods too. I didn't know that asians liked spicy foods. I learn something knew everyday. My favorite foods are mexican foods. That sounds like a good meal that you are making and healthier too then a lot of meals since it has vegetables in it.Sounds yummy! Have a good week!

Sweety
You forgot about 'kheer' and 'chilla', i always ate chilla hot and cripsy, right from your frying pan, you became expert in making that, your hubby liked kheer so much, i saw him licking fingers most of the days
You reminded me of the sweet days.

i have been reading your blog and i was having fun. you were cooking and yet having a great time. it says it all - a happy cook! and id like to try it sometime too. the biggest cookie i ever saw. but you called it bread as well anyways.

hi ann ,i also like spice food as i am an indian. we indians add many spices in veg and non veg curries and in biryani recipes. i use ginger garlic paste in every curry i make. and i use cardomom powder,corriander powder(called dhania powder in india),red chilli powder,pepper powder,cloves,star anise, nutmeg,cumin,mustard,fennel,saffron,asafotida.
and i will also add bay leaf in biryani recipes.
we make all powders in house and will be freshly used in any indian recipe i want.
u can make any mixed vegetable curry,or paneer curry ,or any manchurian recipe with stuffed parata or any biryani recipe for professor. make those on my behalf for professor when he next time comes to ur place.

i dont seem to enjoy anise very much but still i use it in my filipino dishes especially some sweet sticky rice (malagkit) cooking we call "biko", rice cooked in coconut milk and sugar to taste.
i have uses of those spices too but not in every viand that i cook. and i dont use much of chili powder.. well just a little to sting a bit.

Hi Ann. I do love those Indian spices!
I think my favourite spice of all would have to be curry. I also love to add some chillies such as Jalepenos for some extra spice and heat to certain dishes.

I don't actually tend to use a lot of spices when I am cooking. The thing that I can think of that I use the most commonly is garlic. The reason that I use a lot of garlic is that I like the flavor of it. In addition to garlic, I also tend to use a lot of pepper in my cooking. There are also some other dishes that I will cook where I will used chili powder, tumeric and other spices like that, but I don't use them all the time.

i agree that spice uses vary and is used in different dishes. i too have dishes wherein i use lots of just garlic and pepper.

hi tigeraunt,
I can eat hot and spicy food but since i am the only one who can eat hot and spicy every time i cook i go for a mild spicy even ordering in a restaurant, i also tried to cook indian dishes an indian friend taught us some indian dishes every time we visit them.
Fried vegetable rice you mean vegetable pulao?
,most of the time i use curry powder,pepper and chili powder.

i asked the name from my indian friend. yes he said, it is vegetable pulao. i dont eat it so hot.. just something that would give a little bite when you bite too.

Indians likes spicy foods, that's how they love their foods. Masala and curry are there favorites especially with paratha bread. Some other Asian countries like Philipines do not have a customary ways to put spices from their foods. Others liked it but majority likes the taste of food with salt, pepper and MSG. As for me, I liked Filipino foods, kabsah, mandi rice, shawarma, chicken chili, ...almost all. I liked eating different kinds of food because that's one of my hobby.

my tastebuds vary from filipino, indian, chinese, western and even italian pasta viands. i guess that is just a good thing because i can eat most food served if ever i go in different places.
