                    Only George Lucas knows for sure. it's his decision and the way he liked it, maybe there wasn't and specific "why" about the colors. Under the same thinking, we may also question "why purple? why not blue? or yellow?"
Or to become more crazy: "Why do they fight with lightsabers? Why not with regular sabers?" Or perhaps with some mental powers to follow the futuristic line 
And think about it, back in 1976 when it was made, the way the "futuristics" things were imagined was very different of the "futuristic" of nowadays.

                            I thought they 'closed the vault' on that! If anything, I think they should reshoot the whole thing, maybe with a slightly different storyline ... with TIME-TRAVEL

                    Why don't you consider green a futuristic color? Are you a greenaphob? 
 How dare you treat green aliens in such a disrespectful manner! It's not easy being green, you know! PAh... purple aliens. 
 Yoda is just fine being green.

                            I dunno; it just seems like everything naturally TURNS green in nature, and it seems like the Jedi would be ahead of the curve on that.

                    Purple!?!? What about a nice metalic green - or grayish silver? But purple? Sheesh! lol!!

                            Back in Roman times, only the emperor could wear purple! (Maybe it had something to do with the fruit they got the dye from, but the respectability stuck!)
Violet is the last color in the rainbow ... 'saving the best for last,' they always are ...

                            Deep purple isn't girlish, but that lighter one fades into pink ... "yuck!"

                    I truly like the green Yoda alot and don't think that purple would really be his color. Mace Windew (srry for the spelling) had a purple light saber and Yoda had green so Yoda matches his saber color!!!
