the summer squash blahs

If you are like we are summer squash is a long awaited treat, but after a month or two you just don't want to even look at one. I found a new dish, takes a little cooking but not a great deal. Steam your squash in small pieces but not too small, you want them to hold their shape in the dish. Fry a large onion in olive oil,
add a can of black beans, drained and a can of diced tomatoes, season well and add
small bell peppers, the colored ones, red, yellow and orange sliced small, cook this mixture together until it comes to the boil, then ppour into a large serving bowl, add the well drained squash and combine gently so you don't brake up the squash. Last add enough instant rice to take up the juices. This is your basic mix and if seasoned enough can be served as is, I added pepperoine to mine in very small bits and it was wonderful. You can be as creative as you want and will end with a very healthly, low calorie, low fat dish. And you used a lot of squash.

I love love love squash. My b/f took some squash, tomato, zucchini, and some huge mushrooms...put them on the grill and they were the best veggies I had ever had. All the flavors did nothing but compliment each other. I want them like that everyday now but I get them about once a week.

I did not grow any, but just got a few at the farmer's market. You just reminded me I need to go have lunch. It sounds pretty good, hubby would want to use Rotel tomatoes.
