I want chewy vs. cake-like chocolate chip cookies...HELP!

Chocolate Chip Cookie- cake-like - Mine turn out looking good, but the middle is more like cake.

Unfortunately, I cannot make chocolate chip cookies from scratch. Therefore, I use the premade mix you can buy at the grocery store from Betty Crocker, etc. I follow the instructions to the "T" and my cookies always come out feeling and tasting kind of like a cake/muffin. What am I doing wrong? Am I letting it bake too long? I do not like the way my cookies turn out and would really like some advice as to what I can do to make sure they come out chewy. Please and thank you.

Sounds like you are not flattening them enough, or you are making the cookie too big for the amount of time that you are cooking them. Make sure you are just making globs that are the size of a regular spoon, and then take the spoon, or your hand, and flatten them so they are about 1/2 inch thick, rather than a ball. This should flatten out the cookie, and make it look less like a cake!

Thank you! I do tend to make them a little bigger, I think. But, I have never been told to flatten them. Obviously, my mother was not a baker, lol. Maybe that's my problem, so I will give it a try and see if I can make them chewier! Thanks!!

I agree with reqardsinlife...flatten them some. In making a batch from scratch, I like mine a little more moist..probably what you are calling chewy...so I add an additional 1/2 cup of flour to the batter. That puts more "air" into the dough which gives them "air" when baking so they aren't baked as hard. Dont know if you can add any flour to the store bought rolls, but just thought I"d mention it. Or..if you are buying the roll style...maybe just slice them thinner. I'd suggestion, doing it one way to about 6 cookies, bake and see how they turn out. Then do a different way for the next 6 as see how they turn out. Once you get them the way you want them, you'll always know how to do them!

I have never thought about it flattening them. The only ones I really flatten are thumbprint and pb cookies.

Just try and try until you’ve got the perfect cookies that you wanted. I cannot give you an advice for that because I myself don’t know how to bake it. What can I say is, review your work maybe you miss one ingredient. Then maybe the heat is not accurate to what is stated in the directions. “Don’t lost hope.” In time your work will be perfect.
