Have you heard of potato candy?

It is so good. My grandma used to make it all the time when I was a kid, and I would remember helping her with it. Now I make it every year! I made a couple batches of it this year for Christmas. If you have heard of it, do you like it? And if you make it, how do you go about making it? Like, what all do you add to it? I'm looking into some different ways to make it and adding extra stuff. Right now, I just do the basic potato candy recipe with a small to medium sized potato boiled and mashed, then slowly adding confectioners sugar til it's a dough-like consistency. I roll it out and spread peanut butter on it, then roll it up and slice into pieces! Ah, so good, I want to make some more now.

I never heard of Potato Candy so I searched for a recipe and this one looks remarkably like the process you describe: http://www.southernplate.com/2010/12/old-fashioned-potato-candy.html What puzzles me about it is the use of potato. I suppose that it is more or less the same as using cornstarch (which is sometimes used to make fondant-type candies less sweet, I believe). Mashed potato is almost pure starch. I would like to try this confection using raw or muscovado sugar and maybe include some pecans or walnuts, maybe processed to make a smooth 'butter' instead of the peanut butter (but it would then be quite a different thing). It would also be interesting to use sweet potato instead of the potato, though it might require draining to get rid of some of the moisture because sweet potato is more watery than potato.

I hope you'll write about it so others can try it too, I personally don't have a sweet tooth, I prefer savory or things like jalapenos @owlwings

It is really tasty. :) Yes, you just boil a potato and then mash it once it's done. You'll add a whole lot of confectioners sugar (this candy is really sweet). It will become a dough like consistency and then that's when you roll it out. Then spread a layer of peanut butter on it. After that, roll it into a log and then slice it into half inch/one inch pieces. Here, I found a great site that has the step by step with pictures. It seems like so delicious and i would like to have a try.lol,anyway,cooking is such an interesting thing to do and i need to be creative to make delicious food.Most importantly is that i love sweet thing,which can make my mood really good.

It is very delicious, you should try it sometime! Yes, cooking is great. It's something that I want to get better at but I don't have much patience when it comes to that lol. This candy is very sweet, a lot of sugar in it so this would probably put you in a great mood then! :D

I have heard enough of these sweets, which idea that a vegetable or tuber becomes a sweet, I think that the potato is a very noble food you can turn it into duce or salty, on the other hand, here in Venezuela it is common to make sweet Sweet potatoes, delicious!
