Here is the sentence:
She is one of those who always speak _______ mind. (her/ their)
Then which word should I choose to complete it?

Their is the possessive of they. Since she is third person singular, there should be an s after "speak".

But I think the attributive clause modifies those (people). She is one of them.
So, if there are two sentence like these:
1)They are the kind of people who always speak their mind.
2)She is one of them.
Then how could I combine them to one sentence with a clause?
