The family we are staying with is really special. Normally I would have gone into work today. But I found out on Christmas Eve this mommy gets up at 4 AM and starts making breads and pies for her neighbors and friends at the market. So the guys said stay home and help. I was happy for the break that one is for sure. Today we baked a lot. The family was busy delivering hot baked bread and pies all day today. Here is what we made: 24 Coconut Breads 12 Banana Breads 6 Papaya Breads 12 Pumpkin Breads 12 Coconut Pies 12 Pumpkin Pies 12 Banana Pies Wow this was a lot of work. I am now all hot and sweaty from baking all day in the kitchen. However, my heart is so filled with joy and happiness. To see the look on these people’s face when we drop up delivering all we had made. Now this is the spirit of Christmas here on the islands. Normally if I am home I start cooking two days before Christmas and make gift baskets filled with cakes, cookies and bread for all of my friends and neighbors. I love to go and deliver the baskets and wish all my friends a very Merry Christmas. Have you ever done this for your neighbors and friends? I love to cook for them and make all kids of different foods for them to eat.

This would not really be suitable here in England unless someone lived in a semi rural area where they would be very close friends with most of the neighbourhood.

@poehere One of my nieces lives in Shepton Mallet, which is a small rural village. Here most people know each other, so it would be practical there.

Yes some places you can't do this sort of thing. But in Mexico when we were there working it was possible to do this. Now here on the islands I have been doing this for a long time and I do love to do it. I normally don't do it on a such a large scales and this mommy does but to see the look on some people's faces make it all worth the time and effort we spent doing this one.

Yes it was a lot of cooking. Then when we finished we made some food for the evening dinner. The men of the house took care of the underground oven and roasting the other food on the fires that were lit around the garden. We had a wonderful night and it was so wonderful to be there with this family and all my new found friends.

That would fit in well here. My realtor brought me goodies. I would like to know how to make coconut bread.

I will send you the recipe on this one. We use fresh shredded coconut to make the bread. It is a basic bread recipe that you love a lot. Take away 1 cup of flour and add 1 cup of shredded coconut to this. Then the mommy here does it a little different than me. She uses 1/2 milk and the other 1/2 fresh squeezed coconut milk in her bread recipe. So if you have a favorite recipe for making bread try it this way. That is all we do here to make homemade coconut bread. BTW it does taste so good with the fresh coconut milk in it. I think next time I make it I will do as she does here.

We only have two neighbors and I wouldn't give food to either of them....they aren't into holidays much. Sounds like it would have been less work to go to work! But I know you enjoyed it and now I'm hungry for pie!

Yes you are so right it would of been less work if I had gone in to the office yesterday and worked on the recovery jobs that are still pending. But to tell you the truth I feel like I had the best day of my life and it was so wonderful to do this with everyone here. I do enjoy cooking and making so many different foods. I loved helping out and the family was so happy I stayed home to cook with them.

It was a lot of fun to help her do this one. After Christmas most of the people have come back and ordered a lot of stuff from her. I think now she will have a nice little side business going if this keeps up

This is wonderful. Here the islands are small and people grew up together. So this time of year this mommy loves to treat everyone to a special holiday cheer. It was a lot of fun making all this today. I was able to teach this mommy something new. I taught her how to make a new banana, papaya, and pumpkin bread. She never made them before. I know the recipe by heart because we have a lot of bananas and I do bake a lot of this bread for my family at home in Tahiti. The family loved the new breads and was so excited I stayed home today to help cook all of this.
