Baking Bread

I used to bake bread a lot when I was in high school. More recently, I've taken to make quick breads that use baking soda as leavening. They're easy and can be made in a couple of hours. Plus, they're a little unusual so people like them. Just cuz, I tried a yeast rye bread the other day called bauernbrot. It is an all-day project, rising four times. It uses a starter of water, rye flour, bread flour, honey and yeast. The rest of it is a simple mixture of more bread flour, more yeast, salt and caraway seeds if you want them, plus melted butter and (of course) cornmeal. Then comes rising and kneading and setting aside and rising and kneading and setting aside and... But oh, is the bread good! The crust was a little tough, so I'll have to tent the loaf next time. But the texture was nice. And flavorful! It is a daylong project, though, so I won't be making is again real soon, but I will be making it again.

@msiduri Yes,soda bread is better.One hour is better than a day long project.

Yeah, I'm not going to be doing this very often. But this was so yummy when it was done, I'll have to do it again. Just not real soon. I'm much more apt to bake soda bread, which takes an hour.

@silvermist Yes. I found the rye bread recipe as a birthday present for my mother who loves rye bread. She doesn't bake, but has been dropping hints for a while that she wanted some bread. I think she said once "I think Denise should bake some bread." Subtle.

There was a time when I only had homemade bread in my home. I made everything from scratch. I still make most of my baked goods from scratch, but sadly bread is not one of them. Yeast breads usually require kneading and having carpel tunnel I can no longer knead bread.

That's a standard to which I've never aspired, but how wonderful! And I can understand not wanting to knead with carpel tunnel. It would be quite painful. It's a repetitive, often forceful motion.

Yes. The ingredients are simple enough, but it takes all day to bake. Not something I'll be doing too often.

I do, too. I'll make this for special occasions, but this won't be a weekly thing. It really does take all day.

I've never tried baking bread but I always assume the smell is wonderful as it's baking
