Eggs and Hash Browns Recipe

I did not come up with this recipe by myself. I got it from the vlog of Jackie Mandel Schultz (a.k.a. Life With Jackie). She does not cook. Her mother doesn't cook, her father doesn't cook. She and her husband attempting to cook anything is actually a comedy of errors. But she came up with this recipe on her own and her husband said they were the best eggs she ever made and even their 16-month-old daughter ate them up. Here it is:
Put some oil in the pan (I used olive oil). Chop up onions and brown in the oil. Add frozen hash browns (be sure to give yourself enough time to get the hash browns browned... I didn't). Cook that up until the hash browns are browned.
Jackie poured eggs whites from a carton. I however used 4 whole eggs (I also added a bit of milk to the eggs), beaten, and poured those in. Keep stirring because the eggs will cook fast.
We (both Jackie and I) had purchased a small container of already prepared bruschetta. I should have used the whole container but I used about 3/4 of it making sure to just get the fixings and none of the liquid in the container. Mix it up, add a little salt and pepper and serve. I served it with toast; hubby probably would have liked bacon with it. I KNOW he wanted to add ketchup but refrained from doing so. Heck, there's already tomatoes in it!
Anyway, give this recipe a try. It was really good.
