Anna @rebelann - I think those horses were treated very kindly. Right now it's so hot in Italy that even in the tourist places they do not allow rides with horses, they need to stay in cool areas with shade and water.

Anna The Italian northern recipe for eggplant Parmigiana does not ask for breaded eggplants. Some fry them first, but I grill a few minutes before layering with the sauce and cheese.
