What is Your Very Favorite Form of Potato?

Oh my there are so many delicious potato dishes! I can't give you a complete list of them, but some are:
Potato salad
Potato chips
Mashed potatoes
Baked potatoes
French fries
Mashed potato pancakes
Potato soup
Baked cheese potatoes
Parsley potatoes with butter
Home-fried potatoes
Hash-brown potatoes
Shoestring potatoes
The last one I list here is my very, very favorite! I like to grate potatoes (raw) and stir the result up, then fry the "batter" in a 50:50 mixture of olive oil and butter. When the result is deep golden brown on both sides, I positively powder them with salt and...
Well... and... and... EAT! EAT! EAT!

That is a hard choice for a potato lover like me, just one! Okay I will have to choose a baked potato fully loaded, butter, sour cream, green onions or chives, cheese and of course bacon.
