So, who cares that it took almost a week for me to make the filling.
It didn't take long for me to make it. I find making homemade pie filling to be easy as pie!
The most difficult part of making homemade cooked pie filling is tempering the eggs. Care must be taken not to cook the yolks.
I promise you that once you make a pie from scratch you'll never want to eat a store bought pie again.
Sorry to my hubby for making him wait so long for a slice of his favorite pie.

I am worried that the meringue will separate due to the fact that I didn't have any cream of tartar. But it does look pretty good hey?

Lemon meringue is my favourite pie. I don't have it very often but I have lemon meringue pie pudding cups that tide me over until I get a piece of pie.
I'm not much of a cake person. I like pie... all flavours of pie, but number one is lemon meringue.

I actually prefer pie over cake too! When asked what kind of cake I want for my birthday I always reply "pie!"
There is no pie that I don't like. Some I prefer more than others. Amongst the top 5 are: pumpkin, blueberry, lemon meringue, mincemeat, and strawberry-rhubarb.

@ElusiveButterfly I never even tried pumpkin pie until they had pumpkin pie cheesecake samples in my local frozen meats store. I was reluctant but surprised that I actually liked it. My top 5 are lemon meringue, blueberry, apple, strawberry-rhubarb and chocolate pudding pie.

That pie looks so darn good. That is my son's all time favorite pie. He even chooses that instead of a birthday cake. I have never tried a home made lemon meringue pie... you definitely have me curious whether it takes a week or not lol!!

When my brother in law was alive, that was his favorite pie. We had never had it much, since my mother and sister were big on making apple pies. But once the lemon meringues began coming, I have to say that it did become one of my favorites, too! So delicious and refreshing!

I agree with you: nothing beats homemade cooking. I invited my daughter and her family to a good restaurant while on the beach. After all, they had invited me for the weekend. Claudia asked for king crab pie and I had a sort of abalone pie. I told them afterwards that they would be invired to my house to taste the real thing. And, BTW, I will spend less than a half on it all.

I have been to bakeries that charge about $15 for a pie. That is crazy. I have never had pies made with crab or abalone. Now I am curious. I love seafood.
