What To Do With Canned Mixed Beans, Corn Kernels And Diced Tomatoes?

So here are the canned mixed beans, corn kernels and diced tomatoes we were given. So far, this is what I plan to do: - saute garlic, onion, and ginger in oil - add drained mixed beans and corn - add diced tomato - season with salt, pepper and sprinkle some herb mix I'm not sure whether to crack 3 eggs on top, or grate cheddar cheese. Should it be eggs or cheese only, or can you do them both? I'm not sure whether to make it soupy or thick. Maybe I'm mixing two different dishes? I don't even know what they're called, but I've seen them.

Interesting - I see those ingredients as being a part of some Mexican or a Southwestern (American) dish. You could throw all that together and add some cumin, garlic, and oregano . . . maybe throw in some ground beef. And cheddar cheese on top of that would be great! Scrambled eggs with the leftovers would be awesome for breakfast! What was the final concoction?

@hereandthere I like that you can throw anything in to make a soup! I had to look up what shakshouka was. I don't think I've ever had it - but it looks good!!!

@much2say took the easy way out and made it a soup, then grate some cheddar cheese before eating. the dish with egg (but no beans) i was mixing this up with was called shakshouka.

yep, soup was the easiest way since i'm not fond of cooking. then we grate cheddar cheese on top before eating.

With the mixed beans, I would just normally drain them and put some homemade vinaigrette ..

I think it's better without the eggs... but that's just me... I would love a mixed taste of sauteed beans and corn without the egg

@hereandthere that's another story... lol. Anyway, it's not that i'm not fond of eggs. It's just that, the beans and corn would be much appreciated without it, in my opinion... But if you want the eggs in it, I think some rosemary will add some magic to it...

I don't know what dish is that but I would perhaps put grated cheese on top and will make it thicker.

You can even add to fried rice with a few eggs. It will make the fried rice taste nicer, and more nutritious too.

I don't eat cheese anymore too much calorie and beans because of my uric acid problem. so i just stick much with green vegetables.

@hereandthere If the liquid was poured out of the cans I don't think they would be soupy. Corn and beans make a protein. You wouldn't need meat for protein. Try it one way and then another day try it another way.

I guess if I had those I would think of it as being on chopped. I would probably have made the beans with the diced tomatoes and some white rice with corn on the side and of course if you are lacking a protein then eggs would be fine. I can make without the meat though not all the time but every now and then I don't mind not having a meat with my meals.

@hereandthere it's like chili con carne that has lots of recipe in the net but you did not mention that you have meat. If you do not like spicy foods then it's not for you.
