Lassi - The Sweet Punjabi Lassi - To Drive the Summer Heat Away

This is the favorite of almost all Indian. The Sweet Lassi is more famous in Punjab than in any other states. It is a good drink made of Curd/Yogurt with many ingredients added giving it different names viz., Sweet Lassi, Salt Lassi, Pineapple Lassi etc., Lassi can be prepared either thick or thin. The speciality of Lassi is that it is always prepared using wooden churner instead of a hand or motor blender to give it the original rich taste Preparation in a mortar take 10 cardamom pods, crush them and separate the powder. Keep it aside. In a separate bowl take 2 cups of sweet curd Take a wooden hand blender and whisk the curd to make it a smooth paste. Add 10 to 15 spoons of Sugar Then add 2 cups of Chilled water according to the thickness you want Now churn it with the wooden hand blender Go on churning the mixture till all the Sugar dissolves and the mixture becomes highly smooth. Now add the Cardamom powder and also some rose water. Again churn it. Again just churn the whole mix. Add just one or two Again churn it finally. Fill it in a tall glass. It is garnished with Almond pulp or pieces. Sometimes it is prepared using Pineapple syrup, Grape Syrup etc., A good drink to be enjoyed during summers.

It looks delicious! My doctor used to tell me to drink Lassi when I was pregnant, but what he was talking about was something that involved fruit juice mixed with milk that had been heated then cooled. Your recipe sounds much more tempting!

I have often seen it on menus, but have never tried one. I like all of the ingredients listed, so will be doing so very soon!!
