Are You Throwing Away Good Eggs?

I have a friend who raises chickens for the eggs. He told me several times that eggs last a lot longer than most people think. He used to give me eggs by the dozen. I met him about halfway between our homes at a farm equipment store one time to get some eggs from him. He lives about forty-five miles (72 kilometers) from me. When I met up with him he opened the door of his car and there were the eggs in cartons setting on the floorboards. Nothing to keep them cool in the hot summer sun. “You didn’t put these in a cooler?” I asked. “There no need to,” he said. “They don’t really need to be kept cold all the time.” That surprised me, but since he was giving them to me I wasn’t going to turn them down. I took them home and found none of them were bad. The other day Dr. Oz had a woman on from America’s Test Kitchen. She showed a few recipes then Dr. Oz asked how long you should keep eggs after the date on the carton. Her answer surprised Dr. Oz. She said they found eggs are still good up to four months after the sell by date. She recommended leaving the eggs in the cartons and putting them in the rear of the refrigerator and not in the egg holders in the refrigerator door. She said to put your hard boiled eggs in them. I have known for many years that eggs will pick up smells in the refrigerator. The Test Kitchen woman said that is why you want to leave your fresh eggs in the carton. Should we even be eating eggs? Dr. Oz pointed out that it wasn’t the eggs we needed to worry about but the other things we eat with them, such as bacon and sausage. My “egg” friend claims that research has shown not eating enough eggs causes macular degeneration. True or not, I don’t worry about eating eggs. Does any of this change your mind on anything about eggs?

Nope, I get farm fresh eggs not grocery store. I find they taste better, and they can last longer. Most don't realize what they buy at the store can already be months old.

I didn't know eggs could last that much longer! We usually end up using up all our eggs by the expiration date anyways - eggs run out fast in our house! I've always wanted to try farm fresh eggs (which they sometimes have at the farmer's markets), but I haven't bought them yet. I heard if you get farm fresh eggs, you will never go back to buying market eggs again. Interesting about the macular degeneration . . . my mother in law has that and I know she has only eaten egg whites for years (she buys that Egg Beater stuff). I don't eat just whites because I heard that it's the yolks that carry all the nutrition (there's that word "yolk" again). So maybe there's something in the yolk that helps to prevent macular degeneration.

You should at least be buying cage free eggs. No, that does not mean the eggs are kept in a cage. It means the chicken are allowed to roam rather than being stuck in a cage 24/7. Fresh farm eggs are good, but my friends chickens now only produces enough eggs for him so I no longer get them free. Dr. Oz said never to eat just the egg whites–eat the whole egg. He said there is basically nothing nutritional in the whites. It's hard to say whether eggs do prevent macular degeneration but it is what my friend found when he was researching eggs.

@RichardMeister Yah, we get the cage free eggs (no eggs were ever in a cage ). When we did go the farmer's market yesterday, I did see an egg guy and was tempted to buy again, but didn't - but of course I thought of you! I heard chickens only lay eggs for a couple of years and then they're done - not sure if that's true. I eat the whole egg - just eating the white seems like a big waste too. The whites alone are kinda nothing tasting too.

@much2say My friend said when he first got his chicken the laid eggs like mad. That's why I got so many eggs. But the older they got the less they laid. He said the don't always totally quit laying eggs. Sometime they do and but not always. I've never eaten just the whites unless you are talking about the whipped egg whites on lemon meringue pie.

My boyfriends parents put eggs outside which I was shocked. So good to know they can last longer!

I think eggs are healthy and agree that it is the things you eat with them that may be bad for you! The cost of eggs in the grocery store has gone up quite a bit recently!

The big scare they had about eggs a few years ago had a lot of people running from eggs. It never stopped me from eating them.
