Any vegetarian/vegans here? Or recipes with some lean meat is okay

I am looking for aa easy cookbook (not too expensive) for someone who needs to eat more fruits and veggies, but is not much of a cook. She isn't able to use the internet, so I thought I would buy her a book so she could make some meals. Update: I need to mention my friend's idea of cooking is a dump cake or a frozen dinner. I doubt she has any specialty pans and so I need something that is really simple, like for beginners. Another Update: A little meat is okay, like chicken or beef, but focusing on more fruits and veggies in a dish. Ingredients that are avoided are sugars (of course a limited amount of natural honey and fruit is okay) gluten, wheat and that includes pastas. Also, no cheese, not for a while.

@vandana7 This person wants to give someone recipe book. The author isn't looking for recipes for themselve. Do you know any cheap and Indian veg recipe books?

I learned cooking by watching Tarla Dalal on TV...lol. The other person you might want to check on is Sanjeev Kapoor. :)

@Carmelanirel2 .. I find those dishes pretty simple. Sanjeev kapoor is quite famous though I like Tarla Dalal. "The delights of vegetarian cooking", The Pleasures of Vegetarian Cooking and then there is Nita Mehta..too...some special region recipes are also available.

@vandana7 I've never heard of those, are they famous chefs or something? I don't want anything too complicated and most of her cooking will be shared with others at a carry in, so I was thinking something as simple as mixing various fruits and vegetable (hot or cold) to create a dish.

I\m looking for a printed cookbook for a friend and I forgot to mention (and I will add it) this friend doesn't do a lot of cooking, which is why the need to learn to cook, but to learn to cook more healthy. So nothing fancy or difficult.

To get more fruits I usually drink a smoothie everyday. I put in wheat germ, yogurt, frozen blueberries or cherries, cranberry or orange juice, oatmeal, ice and carrots.

@Carmelanirel2 I use regular oatmeal yet. I put a cup of it in with the two cups or juice and blend it until its smooth. Then I add the ice.

Oh, I love smoothies, but I never tried it with oatmeal before. Do you use regular oatmeal? I was told the quick oats are not as healthy.

@shaggin Wow, talk about healthy. I am going to try that, because I am not much of an oatmeal eater (I prefer cream of wheat) but knowing the benefits of oatmeal, if I can consume it in a smoothie, I would definitely add this to my list.

@Carmelanirel2 I think some lean meat goes a long way towards meeting the body's requirement of nutrients.At my age,it is better to eat less fat meat .I beg your pardon,Do you have problem with blood sugar?

Well, I was going without meat, but I guess some lean meat is okay, but we are trying to get rid of sugars and wheat and that includes pasta. Even my boxed veggie pasta has an ingredient in it that is wheat.
