Emergency Food: Salted Eggs

Photo above shows the salted duck eggs I made. I marinated it in so many salt, little water and a little red wine for three weeks. Was so happy with the result.
I called it "emergency food" because you can store it in the refrigerator for so long; can boil and stock again then use/eat when you ran out of food in the ref; or when you can not decide what to cook or is lazy or not in the mood to cook; when you have no time to cook and your family is already
hungry.
In times where there are calamities, it is a very handy food to ease hunger.
What food do you stock for emergency cases?

Yes, uso na naman dahil tag-bagyo sa atin! (it is timely because of the storm season in our country). We have to stock some food specially when we can not go out if there are floods or storms.

I'm a self confessed prepper so i always have things for any emergency whole year round, i love salted eggs with freshly cut tomatoes and onion rings eaten with hot rice hmmm,,, especially when there is a typhoon and we cannot go out

That salted eggs sounds yummy. I prefer to have canned goods in case of emergency.

It only happened that someone who owns a duck farm gave my husband a tray of duck eggs. So I Don't know what to do with it and decided to have it preserved with salt. I searched the net how to do it. The result was good.

@acelawrites Twice a day..but in other parts Western and Northern parts it is wheat...'rotis' .

@responsiveme sometimes, but often we use iron cooking pot. Do you mean rotis like roti paratha.? I like it plain just heated in a pan.

Uhm... no, we really don't stock up on emergency foods. Not in the same sense that you would need to, at least....
The emergencies we stock for are longer term than a flood or a blizzard. I'm afraid the salted eggs would not last long enough to bother putting into our emergency cache. Our cache is forty miles from our home.
We always have a month of food in cans and frozen in the house, but our emergency stock has food for two years. We slowly work the foods there back into what we have at home, to make sure everything in storage is still in date and nothing has bothered or damaged anything there.

Yes, you can not stock salted eggs for so long unlike canned foods. It has shorter shelf life.

Yes, Betty, you can also do it using ordinary eggs, but maybe shorter time for marinating because chicken eggs have thinner shells than duck eggs. But for shelf life, I think duck eggs can last longer.

So nice, drinking water is the most important item to have for emergency cases. It is pays to be always ready.
