Frugal Meals

The picture is from one of our meal times on the mission trip. I took the picture before the 10 or 12 extra people joined us.
What prompted my title is this meal that I am eating for lunch right now. It's one of my mom's friendship meals with beef.
What I notice is how many different main dishes they make with a hamburger patty.
They call the meals all kinds of things. For example, a salisbury steak is just a hamburger patty that is covered in mushroom gravy.
According to mom's menu, today is supposed to be a beef cutlet. It's a hamburger patty on a bed of rice and covered with tomatoes, peppers, and onions.
Sometimes the hamburger patty is just covered in the tomatoes, peppers, and onions, but I don't know what they call that.
I know that they have very limited funds for the meals that they provide to those seniors in need of them. I think it's great that they get inventive in this way to dress up a plain hamburger patty. I think it's a lesson that a lot of us can learn from.

There are many ways to stretch a meal and a hamburger patty can be a pretty big deal, whatever you call it. I imagine you had some interesting meals in Arizona.

We cooked our own meals while at the mission--well Anita was the cook and head bottle washer as she said. We always had at least 10 to 12 others from the mission and families join us each meal.
We each put in $50 towards the food for the week. She was smart and did most of the shopping at Aldi.
