Tonight's dinner will be a nice pork roast. I typically let the pot roast cook on the stove top in onion soup and sliced onion. It seems to make it so tender it will melt in your mouth. And the gravy it makes is fantastic. With it I will be fixing baby red skin potatoes and mash them. Also we will be having a pot of fresh carrots. I love my carrots. It's an easy dinner to fix, it almost fixes itself. Plus, you always have leftovers for the day. It's a win-win dinner. What are you eating tonight?

I love pork roast. I will try the onion next time we roast one. I would try it in the slow cooker perhaps. Thanks for a new idea to fixing this delicious meat.

@HazySue ......That's the only issue I have with it. Is it is rather slow. And, my grandmother taught me how to seer the meat so it is tender. I don't worry too much about roasts. Things like ribs and chicken I like to cook in the slow cooker though.

@celticeagle I do like crockpots mostly because you put your food in and don't have to do another thing until you sit down to eat.

@celticeagle I like using the crockpot for roasts. I did it on the stove because I need to have it cooked through in less time.

@epiffanie I don't have pork very often. The seafood is actually the healthier choice.

Pork for everybody! I made a pork chop (that my cat tried to steal from me!) and a sweet potato. They were delicious and filled me up!

@CRK109 I love pork chops. Sweet potatoes with cinnamon butter are terrific.

@HazySue The real reason I love sweet potatoes so much is that I can eat them with absolutely nothing on them and they are delicious. Can't say that about any other kind of potatoes. So these are my favorites!

I'm jealous! We had goats' cheese pasta bake (my daughter's vegetarian). It tasted good, and we did overdo things yesterday - but your recipe sounds fantastic!
