This Week's Special Recipe-Creamed Spinach

This one is crazy simple. All you need is spinach and a white sauce (Béchamel). I used frozen spinach for the recipe, thawed, drained and cooked in three tablespoons of butter. I used two 16oz bags of spinach. The white sauce is made by melting a stick of butter in a pan, stirring in one half cup of flour and then 2 cups of milk. Cook, stirring often, until it thickens. Stir into spinach. Even if you aren't a fan of spinach, the white sauce is easy to master and is the basis of many dishes. Homemade macaroni and cheese for one.

I add garlic and a bit of cayenne into my white sauce for creamed spinach

I did add some onion. Just forget to say so. I wasn't in the mood to chop up garlic. LOL
