Tonight's dinner -- baked potatoes

I have potatoes in the oven baking, I'm planning to cube some of the smoked chicken, cook and crumble some bacon, and make cheese sauce and broccoli to offer as toppings.
I wish I had a can of chili; we could have chili/cheese/sour cream topped potatoes too! But smoked chicken/broccoli/cheese/bacon topped potatoes will be great.

I always opt for stuffed potatoes if they have them at any fairs we go to. I love them.

What kind of stuffing/toppings do you like for yours?
We sometimes see stuffed potatoes at fairs here, but we're more likely to see fries served with all sorts of toppings. My favorite kind would be crab salad topped fries, which I am sure would be gorgeous stuffed in a potato.

It started out as "how can I use this chicken for dinner?" and then thinking of the 10 lbs of potatoes that I just purchased.
