3 Less Green Tomatoes!!!

As I mentioned in an earlier post we had to pull up the tomato plants as we had a deep freeze. (I'll link the post below.) So, I used 3 tomatoes in a Green Tomato Jam recipe. It was real easy. You pureed 3 medium green tomatoes (2 1/2 c. pureed.) Add 2 cups of sugar and simmer the green pureed tomatoes and sugar for 20 minutes. You remove from heat and add a 3 ounce package of raspberry gelatin. We had cranberry gelatin, so I substituted cranberry for the raspberry. Cool it before putting lids on and refrigerate. It can be refrigerated for 3 weeks. It's not what one would expect from green tomatoes. Turned out pretty good!! Besides green fried tomatoes and this easy green tomato jam, what do you do with green tomatoes? I'm letting some of them ripen up too. ~Peace~ photo is my property

I mostly let them ripen. My mom used to make chow chow , a green tomato relish. I fry a few while they are green.

Chow chow? I might have to do some research on that!! They are ripening up pretty fast though.

myh mom made a relish from green tomatoes and a few red ones called' picka lilli so good wish the stores sold it its really delicious
