Basil aroma fills my house: making pesto at home.

Every year, I plant basil and collect its leaves before the plant blossoms. With the leaves, plus garlic and a good olive oil, I make pesto in the blender. Around this time of the year there are many chores that have to do with having enough goodies to eat during winter. It is now when I remember the books I read during my childhood written by Laura Ingalls. Those books, "the little house books" as I called them, were not only literature for children. They shoked in a very realistic way how the west of the US was conquered by people who settled there in homesteads. I am comfortable at my home and have never had the problems those people had. But I admire their capacity for work. I want to add that here, at mylot, we have some friends who sew patchwork quilts. My admiration for them!

Basil is like what we call Tulsi here. I make a paste too using Tulsi and other herbs around. I refrigerate the stuff and I can eat it for many days. How about your pesto. Do you preserve or have it the day you make it?

I make pesto (with basil) to last for the whole year. I have read online about pesto made with other herbs. But for me, the real pesto is the one that my half italian grandma taught me. And it is basil. I freeze it. That´s why I don´t use salt or nuts of any kind.

@allknowing I make the sauce. Then I boil some pasta, add some pesto and a bit more of olive oli and grate some Reggianito cheese on top. YUM!

It is easy and unexpensive. And a lot better than the one you buy. I don´t add salt or nuts and keep it in the freezer for the whole year.
