Turkey Soup on the Stove

I am off to start a pot of turkey soup. We had turkey for Christmas and I always make soup from the leftover turkey and the carcass. Gonna smell so good in here in short order. I love the smell of soup simmering on the stove. Today is a good day for it too. Snowing at a good clip now. Do you make homemade turkey soup? If so, do you simmer the carcass for hours or just use broth and vegetables? Rice or noodles?

I've never had turkey soup but I sure enjoy chicken soup so I think it'll be just as good (if not even better)!

@infatuatedbby my husband likes egg noodles in the soup. In a pinch I break up spaghetti into smaller pieces and add that at the end of cooking the soup.

We don't make turkey soup but the smell of soup is always good.

I have to wait for it to cool down so I can remove the remaining smaller bones. Even though I try to get all of the bones out, there are some that remain.

I make home made turkey egg noodle soup with some vegetables and it is always so good.

I've used noodles or rice in mine. My preference is noodles though. Or, just with extra vegetables.

I used to do this with the turkey, but now we eat chicken instead but I still do a chicken broth.

I also use the chicken carcass to boil down to flavor the broth. Not to mention how much nutrition you get from it too.

Just make sure there is no hair in the soup! Lol! I usually give leftovers to my kids, but I do make a great chicken soup.

@DianneN it will be worth the wait. I didn't even have supper tonight. I picked my way through the process of preparing the soup and tonight's meal. I am stuffed.

That made me laugh! I did give a lot of the leftovers to my kids too. But, I love to make soup and can't wait to have a bowl tomorrow night.

Yes. I have a lot of turkey leftover so I'll have enough to last at least a week. I did promise one of my friends a bowl of it.

I don't make or eat soup if I can help it. I'm not a soup fan. It does sound good though. Enjoy.
