Why do websites impose payment minimums?

I write for different websites that pay, have a Google AdSense account, an Amazon Associates account, and an account on Lulu through which I publish my books. All these sites have a minimum amount that people must earn before they can get paid. Some websites have a low minimum, while others (like Google AdSense) have a high minimum. People won't get paid until those threshold amounts have been reached.
If I have something in any of my online accounts mentioned above that I have already earned I want to get that money... I don't want it sitting there for months or years, and potentially never going into my bank account at all just because the minimum may never be reached.
When people have a job, they get paid every month or every two weeks, or even every week, no matter what. The same should apply to paying websites mentioned above. No matter how much people have earned they should get that money every month.
Why does there have to be a minimum for people to get paid (especially a high one)? I never understood that. I think it's a bit unfair to impose that, especially when the minimum amount is high, because if people earn something, but never get to that minimum amount, they will never see what they have already earned, which is rightfully theirs.

they just do or people would be cashing out all the time.

My theory is it could lessen their work since they do not have to pay from time to time, perhaps paypal or payment processor fees would be cheaper if done in large amounts, they would get ahead in case they close down, they already got revenue from our work and they do not need to pay those who did not reach payout, again these are just my theories.

There is some truth to what you say. If websites pay via paypal, and there are fees they have to pay for sending money, then it makes sense to wait till payment amounts are higher... But at the same time wouldn't it be the same thing... in terms of fees? Whether they send many smaller payments or few big ones won't the fees add up to the same amount in the end?

@lovebuglena I am not really sure if bigger amounts would have less fees but PP has a mass pay feature but again i am not sure as to the fees. Most likely they could set the threshold to a certain amount and it would pay automatically instead of paying members individually everytime they make a request.

@lovebuglena yes, what I was referring to was the side of site owners and admins when they pay members, they just set payouts to a certain threshold so it would explain why there is a minimum
