Tonight in honor of Cinco de Mayo, we are having chicken soft tacos.
I also made some sangria. So I will be partaking in a couple sangria spritzers.
I have gotten in the habit of doing themed dinners for Holidays. On St Patricks Day we had corned beef and cabbage, on a less well known holiday a few weeks back we had Chicken Cordon Bleu on National Cordon Bleu day.
It's just a nice way to celebrate the ordinary days and make them a little more exciting, and an excuse for me to be a little silly. We all need some silliness.

@thislittlepennyearns It was really going to be just plain spaghetti with olive oil and garlic as I haven't been to the grocery store in 2 weeks. But then I found a container of frozen homemade meat sauce to save the day!

@JohnRoberts I didn't mean any offense. I just remember when my great grandparents were alive they observed the fish on Fridays thing and they were VERY catholic.

I am not a huge fan of lasasgna. I make mine with alfredo sauce, because i dont really like red sauce.
