tonight's dinner -- polenta with sausage and spinach (or broccoli)

I had no idea what to fix for dinner when I was poking through the freezer this morning, but I pulled out a package of Italian sausage and hoped I'd have some idea of what to make before evening. Pasta seems an obvious choice to go with Italian sausage, but with some gluten free people in the house (and others who hate gluten free pasta), it's a bit more complicated and problematic. However, everyone in the house can eat polenta, and I can make a decent soft polenta dish in the rice cooker. I'm planning to stir-fry the sausage with either spinach or broccoli (I need to use up the fresh spinach soon, but I also have some freeze dried broccoli that needs to be used too), and serve that on top of the polenta. I'll put some Parmesan on the table too.

I sure hope it will be! It's definitely easier for me to deal with than pasta right now.

I have never tried polenta and somehow I don't think I will ever. To me it is not appealing at all.

Because it's made from cornmeal? This is a soft polenta, rather than the firm kind. It's also made with plenty of butter and cheese.

It's too hot now to make polenta (that it is a classic from the Italian region where I was born). I still make polenta the classic way, using a copper pot and turning continuously until is ready.
