New ideas for lunch.

My friend who was coming for lunch today called saying that she could not make it. And just when I was thinking about a lotting day with leftovers, my eldest daughter asked me whether she could come for lunch.
I said yes, but had to change the menu. My friend has special needs as food goes and my daughter is too thin so I´m always trying to cook something special for her.
I had a turkey thigh out and I just fixed it and put it in the over. It has onions, spices, white wine and on top of it bacon strips. I deboned it first and that will make a good soup for me tomorrow.
See you after I get ready for my girl.

I'm not sure I could come up with anything great on that short a notice, especially if I had to depend on what was in the house! I like what I have but it's really simple and it wouldn't be good to put before a guest, in my opinion! (But they would probably eat it and be happy.)
