Banana Nut Porridge

This is a recipe that is included in the 21 Day Detox Diet Manual that we received and are supposed to follow. There are a bunch of recipes at the end for us to try and this was one of the breakfast ones. I kind of glossed over it because it just sounded weird but everyone else in the group was really excited about it and made it right away. Then they all raved about it so I knew I'd have to get the ingredients to make it when I did my next shopping trip. . . . . . and here we are. You soak cashews, almonds, and pecans overnight in a bowl of water. Then you blend them up with a banana, coconut milk, and some cinnamon. Voila. Microwave a small portion for 40 seconds to a minute and there is your grain-free, Whole 30-approved breakfast. I have to say that it actually was really pretty good. It also was very filling which makes sense because it is basically all nuts. The texture kept going back and forth for me between strange and "okay, this is like oatmeal". I'll happily eat the rest of what I made and will definitely make it again and again. I get tired of eating eggs for breakfast all the time. Note: if you decide to try this recipe (and you should!), reduce the amount of coconut milk by half. If you use the full amount it will be way too soupy.
I am in the midst of my first Whole30 challenge as a reset for the year and to overcome my slight addiction to Paleo treats. I actually make more than I eat, especially since writing my cookbook, but they are still very prevalent around this house. It's on

@NJChicaa I'll do that. I have it marked on the recipe. I'll make it in the second thirty days. That's when I'm going to add bananas to my diet, along with the other fruit not found on the 'best' fruit list.

Make sure you use only 1 cup of coconut milk instead of the 2 that the recipe states.

No problem! It's really good and super easy to make. Just make sure you use only 1 cup of coconut milk instead of the 2 that they call for in the recipe.

It sounds decent but alot of work as well as expensive. Nuts are pretty outrageous these days.

not really a lot of work. Throw the nuts in some water overnight and then throw everything in a blender. I bought the nuts at Trader Joe's so they were cheaper than the grocery store and you only need 1/2 cup of each for one batch.

You don't really need sugar because you have the banana. My banana wasn't super ripe because I don't like them that way but if you used a really ripe one, it would be so sweet you wouldn't want sugar.
