What's for lunch?

I'm so busy this week that I made up a ground meat and multi-vegetable stew at the beginning of the week, and some chicken and vegetables that I ate up yesterday. Fortunately I still have enough stew to carry it in my lunch for the rest of the week. I will probably have simple and quick suppers like melted cheese over bread or rice, because I am doing the musical every evening. I'm trying to make my lunches count for something since I'm unlikely to eat "a good dinner." What's for lunch at your place or in your lunchbox?

Sometimes we get so busy it can be hard to find time to eat. It's a good idea to have something already prepared.

Today I ate at my mom,s place. I love vegetables and I eat It every day and most of days What I cook for lunch is enough for dinner too.

That's good. It's easier to make enough for both. Mine usually covers dinner and lunch the next day.

@petatonicsca that is a good option too, when I have to lunch at work I usually take It from Home from the other Day dinner.

Before we have dinner, I always put the meats and vegetables to my lunch box which I will bring to office next day as lunch.

That sounds awesome. How do you cook that? In a crockpot? I may have to try that sometime. I made a big batch of cabbage soup Ive been eating for he past week. Its nice not having to worry aboutplanning meals!

I don't have a crockpot. I cooked it in a regular cooking pot with a lid and then I put that in the fridge and warm it up on the stove the next day.

we have afritada i think it's called that, i am not so sure. it is basically chicken with sauce, ketchupy but with cheese and potatoes, carrots and chorizo
