last night's dinner -- fish chowdah!

Tonight's dinner is a bit more organized, but last night's meal was an exercise in creativity in using up the odds and ends in the fridge. I had a partial bag of tilapia fillets, a few Yukon Gold potatoes, a few red potatoes, and some heavily wilted carrots and celery.
I sauteed the veggies with some bacon, threw in a bag of frozen corn, then simmered everything with the fish and potatoes until soft, and added some salt, pepper, and half & half.
Ta-da! Fish chowder!
I served it with some pickles, coleslaw, cottage cheese (there wasn't a lot of the tilapia and I wanted to make sure there was enough protein), and a fruit salad that I made from mandarin oranges and frozen pineapple.
Tonight was our early Valentine's Day dinner, but I'll post about that another time.

sounds good - never tried chowder as it isn't common in the UK

My youngest daughter will be away for a few days on a school trip and will miss Valentine's Day with us, so we did our "fancy dinner" on Monday.

@spiderdust We are only the two of us, tomorrow we are going to have a special dinner for the Valentine's Day, Friday a special Chinese dinner for the Chinese New Year and the 24th it's my birthday... may be we are going out.

@thislittlepennyearns My sister has an InstaPot that she got for Christmas. I'll ask her which of our mom's soup recipes work well with it.
I know you could definitely make chili in it, and even start with dry beans!

It would be awesome with salmon! I was trying to use up the tilapia though. I didn't have enough fillets to bread and I've fry for dinner, and the chowder helped stretch it.

@spiderdust I bet it turned out great! The salmon did turn out well. I need to find some more soup or chowder recipes since I was told that I'm getting a Instant Pot for my birthday since I didn't get it for Christmas.

Yeah, I found a huge Costco sized bag of it in the freezer, underneath one of the loss leader turkeys I bought at Thanksgiving.
