Dinner haystacks again!

We had an afternoon at the library with the kids today, and I realized after we got home that I hadn't pulled anything out for dinner. I considered putting some chicken breast in the Instant Pot and making pulled BBQ sandwiches, but I didn't have any buns (and my bank account says I can't buy any just yet). I peeked in the freezer and found a package of cooked ground beef -- hurray! I could make haystacks! I've written about haystacks before. The kind we make are a lot like a taco salad -- a base of rice or tortilla chips (or both), seasoned meat, some beans, some cheese, and whatever vegetables I decide to put out (tomatoes, corn, lettuce, olives, avocado, etc). Sometimes I set out sour cream or queso sauce, if I have them on hand. Tonight's variation is closer to the "Amish haystacks", as I simmered the ground beef with some pizza sauce that was in the fridge and some taco seasoning.

I'll probably make pizza sometime this week. The other half used to work at Chuck E Cheese and 2 other pizza places in his younger years, so I have him toss all of our pizza crusts when I make it from scratch.

I made something similar for dinner last evening, I cooked two hamburgers in tomato sauce, added two chopped bell peppers and some seasoning, it was not bad.

We do this now and then, but the vegetables are always on the bottom. Everything else, we put on top, as you said, 'more like a taco salad.' Jay eats anything I fix, so that's a BIG plus, he's not one bit picky. The only thing, he's not crazy about rice, so I don't fix it very often, for myself.

You could easily make it without the rice. I just fix it because they like rice (especially if it's made with chicken bouillon in the water) and it stretches things just a little bit further.

This has been a good one for us, especially since the stepkids moved in. Sometimes I do the "Hawaiian style" with chicken and gravy, and toppings like pineapple and mandarin oranges and diced bell pepper, and they like that one too.
