Belated November Crockpot recipe report card

Better late than never, here's my November crockpot and oven/stove recipe report card from last month. Due to having some leftovers, some recipes I didn't get to do and had crossed over to this month for the final month of the year. Some were hits and some were misses. I was planning to add my two redemption recipes this month, but I'm going to do it next month to start off the new year. Here's the lowdown of the recipes and how they turned out last month: 1. Sweet Potato Casserole-Incomplete. Once again, I didn't get to make it last month. So it's on my list to make it this month. Plus both of my yams went bad. 2. Roasted Vegetables-A-. This wasn't so bad to have as a side dish. Easy to make in so little time. And yes I did have leftovers which also tested well the second time around. 3. Oven Scrambled Eggs-A+. I loved it. I think I might love it even more than doing it microwave in a mug. Delicious! But I had no leftovers for this meal. 4. 3 Cheese Pasta Bake--A-. A real filling meal that's loaded with cheeses to cover the pasta. I also had leftovers that was delicious when reheated. 5. Easy Mustard Glazed Broiled Salmon--A-. A simple seafood dish to pair up with any side dish. Less time to cook and broil and came out good. No leftovers. 6. Slow Cooker Salsa Chicken--A-. This was one of the first two-ingredient crockpot dishes I tried last month. And thanks to @NJChicaa's suggestion, I did add corn and sour cream. It came out all right and less spicy too. Leftovers weren't bad as well. 7. Crockpot Scalloped Potatoes and Ham--Incomplete. I didn't have time to make it. It's on my list for this month. 8. Orzo with Parmesan and Basil-F. I had trouble with the orzo on this dish only. I've tried it twice with the bagged orzo, and it came out hard even after eight minutes. So I must've done something wrong. No leftovers. But it's on my redemption list to do next month. 9. Christie's Kale and Grape Salad--An easy dish to whip together for a filling meal. I've made one hefty big serving to have no leftovers. But I would make it again next year. 10. Slow Cooker BBQ Lentils--Incomplete. I didn't have time to make it last month. But I made it last night and would count for this month's rating. Stay tuned for how I rate it by the end of the year. 11. Crockpot Peanut Butter Lava Cake-D-. I know I've done everything right, except I forgot to add the baking soda. That's why it was a wet mess and didn't rise like a cake. I plan to make it next weekend for this month's list. 12. Hungarian Mushroom Soup--A. This soup wasn't too bad for this version of goulash. I've used regular paprika than the Hungarian version and it came out all right. I only had enough for one serving. 13. Crockpot Chickpeas Pizza--A. This was dynamite. I even had enough sauce to coat the chickpeas just barely. And it was perfect! Leftovers were fabulous as well! 14. Baked Salmon with Lemony Orzo and Bacon Basil--A-. This time the orzo came out better for some reason. But I've made it work. The salmon tasted delicious with every bite. No leftovers. 15. Quick Beef (or Chicken) Stir Fry--A+. The chicken swap worked out wonderfully and the stir fry came out all right. I've made enough for one serving for this meal. 16. Garlic-Lemon Stuffed Chicken--B. With half a chicken breast, this came out all right and tasted pretty good. But my stuffing of cream cheese and cheddar cheese oozed out onto the plate. No leftovers. 17. Emergency Chicken--A. Another fantastic quick and easy meal to make in so little time. I had enough to make two sandwiches out of it. I would make it again in a heartbeat. That's about it for last month's report. Tomorrow afternoon, I'll post what I plan to cook next month. Dig in!
