Tropical meatloaf

Last night I made something new putbof my new Gluten free cook book that I got for Christmas. Tropical meatloaf sounded good. But after making it and getting all 3 kids thoughts they didn’t care for it. No hard feelings meatloaf. I didn’t care for it being sweet either. So maybe next time I’ll drop the mangos in it and just the rest of the recipe as called for. It’s worth a try because I’m sure there are people that would love it.

While I like mango, I don't think I'd care for it in my meatloaf. I am assuming the coconut is replacing the bread crumbs that are typically used. I have to say that I am not a fan of coconut either. I wonder if flaxseed would work in this instead.

I don’t think flaxseed would be a good choice. You can also use cornmeal but got to be careful which brand. Their is gluten free bread crumbs but this recipe asked for coconut flakes instead. This women likes coconut in a lot of recipes. It’s cheaper then flaxseed you can also use sunflowers and pumpkins as a flour just got to blend them down to a powered.

@ScribbledAdNauseum with celiac you really d have to void at all cost eating anything with gluten because it pretty much kills stomach and small intesteds till you burn a hole throw your body. My almost 4 year son has a real bad allergy to glutens so he never eats it, it’s been almost a year for him. I can certainly tell if he has come in contact with it. Over all flaxseed is a normal thing in a lot gluten foods use.

@ShyBear88 I know flaxseed is usually something you have to be careful with. Too much can wreak havoc on the digestive system. I have a cousin who has celiac disease. I was going to buy her a cookbook for christmas but she doesn't particular like being gluten intolerant and so she doesn't follow the diet.

You know... it was actually the mango that caught my attention. I think that it just might be pretty impressive... or I'm in a really weird mood lol!!

@Hate2Iron there is a lot of things I wouldn’t want to try but I’ll give it a go. I don’t like fish but I do like shrimp, crawfish, I e and lobster it wasn’t bad but not great either. I’m more of steak or chicken girl.

I am thinking that it would be betting it would be better without the mangos. As much as I love them I can't imagine using them in a meatloaf. Let us know how it all turns out when you try it without them.

@ShyBear88 I did read that. I was agreeing it would taste better and asking you to let us know how it turns out without them. I bet it will be more to their taste.

Yep! We tried it and didn’t care for it. It wasn’t and just too sweet for my liking and the kids.
