Overnight oats ....a big success !

Yay ….Overnight oats are really getting popular nowadays … I love them and they are so easy to make ...and great that I can make something before I go to bed that is ready for breakfast the following morning. So, what exactly is this all about …. simply make layers in a tall glass of porridge oats, natural or flavoured yogurt and fresh or frozen fruits …...at least two layers of each. Pop in the fridge overnight and in the morning a yummy breakfast is waiting for you ….

When I was young, we had an 'exotic'aunt who had lived in Switzerland and introduced us to what she called 'Birchernuesli'. She would put oats, about the same quantity of water and a handful of dried fruit in a bowl overnight in the larder (we didn't have a refrigerator at the time). In the morning, she would add milk to the resulting paste, grate a whole apple (core and peel and all) into it, add some nuts and a little lemon juice (to stop the apple going brown) and sugar and serve. It was the consistency of a thick soup and tasted delicious. Once we had acquired a fridge, I used to do the same thing but using milk to soak the oats rather than water. The dried fruits could be sultanas or raisins or apricots and should be soaked with the oats. Fresh or frozen fruits, such as grated apple or any raspberries or other soft fruit as available should always be added when serving. Nuts (preferably toasted) can either be added at the soaking stage (when their flavour infuses better and they also soften somewhat) or in the morning. Here's the nearest I could find to the original Dr Bircher's recipe (notice it's a little different from the way I described it):

I tried a couple of overnight oat recipes and just did not like them. I will have to try again.

too much work there.I have oatmeal Quaker and easy to make.Pronto
