English muffin progress

I wrote yesterday that I was going to try making homemade English muffins using Stella Parks' recipe in her amazing book Bravetart. I mixed up the dough this afternoon around 2:30 pm. It is supposed to rise the first time for 10 hours but it isn't quite going to get that long before I portion it out onto a baking sheet and then put the muffins into the fridge (covered) overnight for their second rise. Then, in the morning, they will be ready to "griddle" in my cast iron skillet. I'm looking forward to trying these tomorrow morning! I've never had an issue with any of Bravetart's recipes that I've used thus far. This is another one of her English muffin recipes on Serious Eats. It is different from the one in the book though:

I used to really enjoy making homemade bread. I would bake it in a hot Dutch oven. I almost never eat bread these days though so I haven't made it in a couple of years. I probably will one snowy day this winter even if it is just to give to my parents or sister. It is easy to do, cheap, and makes the house smell great. The bread is so delicious too!
