Coconut juice is used quite generously in our kitchen. It is used for fish, chicken, mutton and egg curry. The curry becomes rich and tasty.
It is also used in sweet dishes. The appam as we call them cannot be made without the use of coconut juice.
Coconut is ground to a paste and the juice is extracted. While on holiday in the US I noticed my niece bought frozen coconut juice, perhaps imported.

We use coconut in different forms, Juice, water, cream block, oil, dessicated and fresh. It also comes in Tins, cartons and au naturel . No coconuts grow in the UK so all are imported. We use it in some dishes. I like the taste of coconut.

@allknowing That sounds yummy! Though I have never tried. Appam itself has a little sweet taste due to coconut juice.
