Coconut juice is used quite generously in our kitchen. It is used for fish, chicken, mutton and egg curry. The curry becomes rich and tasty. It is also used in sweet dishes. The appam as we call them cannot be made without the use of coconut juice. Coconut is ground to a paste and the juice is extracted. While on holiday in the US I noticed my niece bought frozen coconut juice, perhaps imported.

Are those Appams in the photograph above? Is Coconut juice different from the chutney?

It is coconut milk actually. Juice is as we get from the shell directly and naturally. For milk we have to extract the pulp.

We use coconut in different forms, Juice, water, cream block, oil, dessicated and fresh. It also comes in Tins, cartons and au naturel . No coconuts grow in the UK so all are imported. We use it in some dishes. I like the taste of coconut.

Appam can make without coconut milk, even without adding any version of coconut. Is the appam made by you? Have you added 'yeast' in it?

We can buy canned coconut milk here and recently they have introduced also coconut water. It's not bad, but the fresh coconut water is so much better.
