Meal Plan/Prep ~ Week 2

Last week the meals I prepped did not go as I had hoped. Luckily, my husband seemed to like the lasagna casserole, and the BBQ chicken so the meals won't go to waste. So now I am starting to think of meals to prepare for the week, or just to make sometime this week. 1. Low Carb Lasagna This will be different than the casserole I made last week. This will have some deli meat added to add more flavor and texture. I may also buy some ground pork, so it is not just ground beef. 2. Low Carb Cordon Bleu Casserole I have made this one before, and know I enjoy this. It is just a few ingredients too. (Chicken, diced ham, shredded cheese, and the "sauce"). 3. Salmon That was my favorite thing I made last week I think. Just some salmon seasoned with salt, pepper, and some paprika. I may try a different flavor this week, or not. 4. Low Carb BBQ Chicken I might try to make this again, but not with the same chicken as before. Also, may skip the cream cheese. Not sure it went with the BBQ sauce. 5. Low Carb Chili I make this without beans so it is low carb. If I want, I can turn it into a chili bake and add some low carb, healthy "hot dogs". 6. Low Carb Enchiladas I have not made these in a while....so I could make a big batch and freeze some for later on. I think that is a good start for ideas for the week....some of these I can definitely prep. I might try to make some low carb cookies, or fat bombs (aka candy). What do you all think of these meals to make for the week? Do you meal prep? If so....what are you making?

It's good that you found out that you don't like certain ones, and do like others, as it now helps you out in the future. the lasagna sounds odd to me, but I hope you enjoy it ! as well as all the rest.

@MommyOfEli2013 that's weird to me too, but i know many people have different ways to make lasagna to begin with.

@Courtlynn Yeah I guess that is true that people do....some even use alfredo sauce instead of marinara or meat sauce.

Yes, that is a good point....it will help in the future for figuring out what I should make. I definitely understand, adding the deli meat to lasagna sounded odd to me too, but needs something in place of the noodles and I hate zucchini which would normally be in the dish.

The low carb chili is a surprise. I've never considered hot dogs in chili. Your other meals sound good. Good luck with them.

I normally just make the chili, and don't put them over the hot dogs. It just adds another element to them though in place of the beans. A lot of the others I have made before and know are good...so should go better.

That all seems yummy!! I am coming to the end of our meal planning--I plan from Monday to Monday--but tonight is wok veggies and tofu, and tomorrow is enchiladas--Last night was cream of artichoke soup and salad--We are down to pasta one a week--although I love pasta!

I have had most of them and know that they are....so I think it's best to go with those kind of meals! That sounds good to plan that way....hope you enjoy your meal tonight. I plan to make enchiladas tomorrow myself. I understand that about the pasta, I love it too!

I used to but not since Tony is sick, some days I can cook because he cannot stand it. Make those candy things because I notice you are like me and eat sweets and we shouldnt. ALL of the food sounds good

Oh yeah, definitely understand why you don't/can't now. Yes I should make a couple batches of the candies for sure....I will eat the sweets if I am having a cheat day. Glad you think they all sound good; even though it is all meat!

@MommyOfEli2013 I am not against meat, as I get older my taste has changed and I now understand when my dad was my age and told me he did not care for meat anymore. I will eat meat at times but I dont have to have it, I love fish anyway its cooked and I eat chicken.

@andriaperry Well glad to know that....and I understand that tastes can change. Maybe once I can stick to this low carb thing for long enough mine will change and I can add veggies! Sometimes it is more of a texture thing for me though than taste. Fish is really good! And chicken can be a really good protein option!

These are good meals as they are low carb. Carb usually in converted sugar that adds to our bs level. Im going to prepare chicken, am still thinking of how to do it,

Yes....that is why I cook this way. Even though I don't have veggies....this is healthy for me. Sounds good to prepare some chicken. There are lots of ways to do chicken!

Nothing wrong with that, I normally don't either! The enchiladas are good :) Haven't made them in such a long time!
