Microwave Mug Mashed Potatoes

Need some comfort food? Love mashed potatoes? Did you realize that you can make mashed potatoes in the microwave with a coffee mug?
Personally, I just found a recipe today calling for the insides of mashed potatoes to make "Potato Energy Bites" which is comfort yet healthy. The yummy Potato Energy Bites recipe calls for the inside of a potato, a "little" peanut butter, vanilla, syrup, oats, cinnamon, dried cherries optional. Any dried fruit really. Potatoes are energy and yummy. myLot is not allowing me to post both recipes here. I want to have a healthy snack other than peanut butter! Yuck! So tired of peanut butter! Actually the stuff makes me tired. People preach to me about the benefits of peanut butter and protein. I can take my carbs any day. I am sure the "little" peanut butter that the Potato Bites Recipe calls for is to hold it together.

Yes, potatoes are comfort food. But, they are also healthy. I guess it is which food pyramid you believe in. I have always been a Mediterranean diet, where potatoes are permitted frequently.
Following, I now know what to do for my roommate. She loves to mix corn with mashed potatoes at dinner. Now, she can have her corn and potato fix anytime.

I wouldn't try anything like that. I don't like instant potatoes, too much added starch to a food that's already starchy.

@ScribbledAdNauseum I learned on YouTube, how to make mashed potatoes in a mug and potato energy bites. The bites require the insides of potatoes. So, I have found it more convenient to nuke the potatoes as the mashed potatoes in a mug recipe for the potatoes required for potato energy bites. Make sense?

@Spontaneo Yes, that does make sense. I had to read it twice because I read "nuke" as "make" the first time, but yep, makes sense to me.

How to you fix potatoes? Any neat recipes? I make (although I am not of German descent) a recipe called German Potato Salad with Kielbasa. A good comfort food.
